Brunch Date at Home - Croque Madame

My husband and I are big on breakfast food, but like most people our Monday to Friday schedule is typically too busy to really enjoy it regularly. But recently we (and pretty much everyone) have had more time at home to really enjoy breakfast together, so we've been experimenting with new things in the kitchen! On our honeymoon, we got breakfast at cute cafe in Santorini and fell in love with their Croque Madame sandwich. Brady claims this is one of the best meals he's had in his LIFE, so we had to try our hand at recreating it.


If you've never heard of a croque madame, let me simplify it for you. It's basically a grilled ham and cheese sandwich with a fried egg on top... but really it's so much more than that and it tastes heavenly. It took a little bit of time, but we didn't think it was too difficult. Here's the recipe if you want to try it for yourself!


Ingredients (serves 4)

8 slices of bread

12oz gruyere cheese, grated

Sliced ham

Mustard

Nutmeg

1 bay leaf

2 cups Whole milk

4 TB flour

6 TB unsalted butter

4 eggs


Instructions


1. Start by warming 2 cups of whole milk in a saucepan over medium heat. Don't let the milk boil, but warm it until it is heated through. Add the bay leaf and let it steep in the milk.


2. Meanwhile, melt 4 tablespoons of unsalted butter over medium heat. Once the butter is fully melted, gradually add in the 4 tablespoons of flour, whisking it continually until you have formed a roux.


3. Remove the bay leaf from the milk, and slowly add the milk to the roux, whisking it to combine. Add in about a 1/4 tsp nutmeg. Lower the heat and allow the mixture to simmer until it thickens.



4. While the bechamel sauce is thickening, lay out your slices of bread and spread mustard on each piece. Add about 1/4 cup of shredded gruyere on one piece of bread, layer a few slices of ham, and add another 1/4 cup of gruyere on top. Top it with another piece of bread and gently push down.


5. Once you have assembled all four sandwiches, melt 2 tablespoons of unsalted butter in a pan and put the sandwiches in to cook. You'll want to give them about 3 minutes on each side, or until the bread is golden brown and the cheese is melted.



6. Move the grilled sandwiches onto a foil lined baking sheet, and pour the bechamel over the sandwiches, evenly dividing it amongst them. Top with the remaining gruyere and place it in the oven on broil.



7. While the sandwiches broil, fry your eggs (I think over easy/medium is best!). Keep an eye on the oven, removing the sandwiches once the cheese has melted and everything is a nice golden brown.


8. Top each sandwich with a fried egg and serve!
