
Has anyone else been seeing the memes online? Apparently you didn't really live through this pandemic crisis if you didn't make banana bread at least once. I'm just grateful that in these weird times of supply, demand, and accessibility... we're still finding yummy things to eat and make (even if the typical meal plan is completely out the window). Banana bread is awesome because it's a great way to use bananas that have become overripe; I'm sure I'm not the only one still figuring out how to stock up on what we need without things going bad before we eat them. The more overripe the bananas are, the better! The ripening process actually makes the bananas sweeter.
Ingredients:
3-4 ripe bananas, mashed
1/3 cup butter, melted
3/4 cup granulated sugar
1 egg, beaten
1 teaspoon vanilla
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon cinnamon
1/8 teaspoon salt
1 1/2 cups all-purpose flour
1 cup chocolate chips

Instructions:
1. Preheat oven to 350 degrees F. Lightly grease and flour an 8.5x4.5-inch loaf pan or spray with baking spray.
2. In a large bowl, combine the mashed bananas with the melted butter, then add the sugar, egg, and vanilla. Stir well with a large wooden spoon.

3. Sprinkle the baking soda, baking powder, cinnamon, and salt over the banana mixture. Stir to combine.

4. Add flour and chocolate chips (optional), and stir just until no streaks of flour remain. Pour the batter into the greased loaf pan. Then, sprinkle some sugar across the top of the batter to give it a little bit of a sweet crunch on the crust. I also added a few more chocolate chips.
5. Bake for 50-60 minutes, until a knife inserted in the center of the loaf comes out clean. Cool in the pan for 10 minutes, then turn out onto a wire rack and cool completely. Slice into 10 thick slices and enjoy!
